How to Brew Tea
Zi Sha Hu — Yixing Clay Pot (紫砂壶)
Unglazed purple clay from Yixing. Seasons over time to enhance the tea. Dedicate one pot to one tea type.
- Dedicate your Zi Sha Hu to one tea family — never mix rock oolong and black tea in the same pot.
- Heat fresh filtered water to the appropriate temperature.
- Warm the pot by filling with boiling water, covering, then pouring water over the outside. Discard the inside water.
- Add leaves — use 6–8g per 120ml for Yancha; slightly less for other types.
- Rinse leaves with a quick pour (5 seconds), discard.
- Brew with short steeps of 10–20 seconds. Pour fully each time — never leave liquid in the pot.
- After brewing, empty the pot and leave the lid off to dry naturally. Never use soap.
How to Brew Tea
Gongfu — Gaiwan (盖碗)
The traditional Chinese method. Works for all teas — multiple short steeps reveal each layer of flavor.
- Heat fresh filtered water to the correct temperature for your tea type (see Temperatures tab).
- Warm your gaiwan and cups by rinsing with hot water, then pour it out.
- Add leaves — use 5–7g per 100ml of water.
- Rinse the leaves with a quick pour (5 seconds), then discard. This awakens the leaves.
- Pour hot water and steep for 5–15 seconds for the first infusion.
- Pour through a strainer into a fairness pitcher (公道杯), then distribute to cups.
- Smell the gaiwan lid before drinking — the lid aroma reveals the top notes.
- Add 5–10 seconds with each subsequent steep. Most teas yield 6–9 infusions.
How to Brew Tea
Hong Cha Set — Black Tea Pot
A dedicated set for black teas — fuller body, longer steeps, ideal for everyday enjoyment.
- Heat fresh filtered water to 100°C.
- Warm the teapot by filling with hot water, swirling, then discarding.
- Add 4–5g of black tea per 200ml of water.
- Pour hot water over the leaves and steep for 20–30 seconds for the first pour.
- Pour into cups through a strainer. Serve immediately while hot.
- Re-steep with slightly longer times — black teas yield 4–6 steepings at this ratio.

Yan Cha — Rock Oolong
Grown among the mineral-rich cliffs of the Wuyi Mountains, rock oolongs are partially oxidized and charcoal-roasted to create extraordinary depth. The defining quality is yan yun (岩韵), a mineral "rock rhyme" unique to this terroir. Complex, layered, and re-steepable 6–9 times.
Da Hong Pao 大红袍 — Rich and complex with warm roasted depth, dark stone fruit, and a long mineral finish that lingers on the palate.
Shui Xian 水仙 — Smooth and full-bodied with warm orchid fragrance, woody sweetness, and a clean, lingering floral finish.
Rou Gui 肉桂 — Bold cassia bark aroma with warm cinnamon spice that carries through multiple steeps and a lightly sweet, woody finish.
Xiao Zhong 小种 — Delicate honey sweetness with natural floral notes, a silky smooth liquor, and a soft, clean finish.

Yi Pin 易品 — Smooth and mellow with a warm, golden liquor and a naturally sweet, easy-drinking character.
Jin Jun Mei 金骏眉 — Exceptionally refined with notes of honey, ripe fruit, and a velvety sweetness unique to its all-golden-bud craftsmanship.

White Tea — Bai Cha 白茶
Mi Xiang 蜜香 — Light and naturally sweet with a delicate honey fragrance and a clean, refreshing finish.
Gaoshan Gongmei 高山贡眉 — Full-bodied and mellow with dried fruit, sweet herbs, and a rich depth developed through careful aging.
Dragon Ball 龙珠 — Bright tangerine citrus woven through aged white tea sweetness, with a gently herbal, lingering finish.
